Asparagus Tart Recipe

Looking for something a little different to serve up over summer and the festive period? This asparagus tart is easy to make and perfect for picnics, a light family meal, or if you need to knock up something quickly to impress surprise visitors over the holiday season.

Asparagus Tart
Serves 4

What you will need:

1 packet of savoury short crust pastry sheets (you will need two sheets thawed)
2 bunches of asparagus
2/3 cup of cream
3 eggs
½ teaspoon dijon mustard
½ cup finely grated parmesan cheese
Salt and pepper to season


  1. Preheat the oven to 180c. Grease your tin – we used a 24 x 10cm rectangular tin.
  2. Line your tin with the sheets of pastry, trim around the edges and rest the tart case in the fridge for 30 minutes.
  3. Trim the asparagus to fit into the tin length ways. Wash & dry well.
  4. Whisk the cream, eggs and mustard until smooth and well combined. Mix in the parmesan cheese and season with a little salt and pepper.
  5. Place the asparagus into the tart case length ways and pour the cream mixture over the asparagus taking care not to cover completely.
  6. Bake the tart for 25-35 minutes until puffed and golden. Cool slightly, and serve warm.
