Royal Gala Apple, Maple and Walnut Tray Bake

We just couldn't resist making this delicious spiced apple, maple and walnut tray bake by Natalie Oldfield, that featured in a past issue of New Zealand House & Garden Magazine.

For a royal twist to celebrate the Queen's Birthday, we used Royal Gala apples in this recipe. The apple was named to honour the Queen (Elizabeth II) during a visit by her to New Zealand.

Serves 10-12


¾ cup brown sugar
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
¾ cup walnut pieces, roasted*

3 apples, peeled, cored and thinly sliced - we used Royal Gala apples
2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
1 tablespoon maple syrup

250g butter, melted
2 tablespoons maple syrup
2 teaspoon vanilla extract
1½ cups milk
3 eggs
2½ cups self-raising flour
1 cup caster sugar

¼ cup maple syrup


  1. Heat oven to 160°C. Grease and line a metal baking tin about 20 x 30cm.
  2. Combine all the topping ingredients in a bowl. Toss all the filling ingredients together in another bowl.
  3. Place all the batter ingredients in another large bowl and whisk until smooth. Pour half the batter into prepared tin then arrange apple filling over it. Spread remaining batter mixture on top. Sprinkle topping mixture evenly over top then drizzle over the extra maple syrup.
  4. Bake 45-55 minutes or until golden and firm. Cool slightly before cutting. Serve warm with cream or ice cream.

* To roast the walnuts, spread them on a baking tray and bake at 150°C for 10-15 minutes. Cool completely before using.
